Egg Noodles with Zucchini, Tomato, and Olives

Cut the zucchini into slices. Heat some oil in a pan and add the zucchini and crushed garlic. Saute until just tender.

At the same time, prepare the egg noodles. Combine the remaining ingredients with the noodles and toss, adding more olive oil as desired. Garnish with fresh parmesan.

Zucchini-Noodle Recipe

Sounds yummy. With lots of zucchini around, we'll try this one. The other day I tried a zucchini recipe which was tasty and very easy to prepare:

SIMPLE SESAME ZUCCHINI
Preparation Time: 3 min.
Cooking Time: 5 min.
Makes: 4 Servings

2 unpeeled zucchini
1 tbsp butter or vegetable oil
1 tbsp sesame seeds
1 tbsp soy sauce (optional)

Trim ends from zucchini. Thinly slice into rounds. If the zucchini are quite wide, cut rounds in half. Melt butter in a wide frying pan. Add the sesame seeds and stir over medium heat until they just start to turn golden. Quickly add the zucchini and stir-fry just until warmed through, about 1 minute. Immediately add soy sauce or salt and pepper to taste. (If using soy sauce, salt won't be needed.) Serve at once. About 38 calories per serving.
Note: I used canola oil and seasoned just with salt and pepper, not with soy sauce, and I liked it just like that.
