Heat oil in pot or a deep wok. Saute onions briefly, then add carrots, bok choy, and spinach. As you add each vegetable, saute it briefly, then add the next vegetable.
Once all the vegetables are added, pour in the coconut milk and add the bamboo shoots. Add spices and sauces and simmer until vegetables are tender.
The resulting mixture is quite brothy, and tastes good over egg noodles or rice.
